Also known as ivy gourd and peanut curry.
In our household, tindora is that vegetable that no one likes. However, I was able to find a way to make my family enjoy it by adding peanuts. Now my family can get the nutritional benefits of this vegetable, such as anti-inflammatory and antioxidant properties. Instead of fresh tindora, I have chosen to use frozen tindora for its ease of use.
Serves 3 people.
Ingredients:
1 12 oz bag of frozen tindora
2 tbsp peanut powder
2 tbsp oil
salt to taste
Method:
Bring frozen tindora to room temperature.
Heat oil in pan and shallow fry the vegetable until cooked, for about 10 minutes.
Top with salt and peanut powder. Cook covered for 2 minutes.
Serve with hot rice.
