Tindora Peanut Curry

Also known as ivy gourd and peanut curry.

In our household, tindora is that vegetable that no one likes. However, I was able to find a way to make my family enjoy it by adding peanuts. Now my family can get the nutritional benefits of this vegetable, such as anti-inflammatory and antioxidant properties. Instead of fresh tindora, I have chosen to use frozen tindora for its ease of use.

 

Serves 3 people.


Ingredients:

  • 1 12 oz bag of frozen tindora

  • 2 tbsp peanut powder

  • 2 tbsp oil

  • salt to taste


Method:

  1. Bring frozen tindora to room temperature.

  2. Heat oil in pan and shallow fry the vegetable until cooked, for about 10 minutes.

  3. Top with salt and peanut powder. Cook covered for 2 minutes.

  4. Serve with hot rice.
