Inspired by Mexican style.
Stuffed peppers is a dish that is popular in most countries. Everyone has their own version of filling that goes into the peppers. Here I am showing you my version of Mexican inspired stuffed peppers. Please note that you may use any of the gourmet Mexican seasonings that you already have in your kitchen. You can serve this dish as it is or with Mexican rice.
Serves 4 people.
Ingredients:
4 bell peppers
1 and 1/2 cup cooked black beans
1/2 cup finely chopped onions
1 tsp cumin powder
1/2 tsp oregano
1 tsp taco seasoning
1 ancho pepper adobo with roasted tomato
1 tsp chipotle peppers in adobo sauce
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
salt to taste
1 tbsp oil (optional)
Method:
Mash black beans coarsely. Heat oil and mix well all ingredients except bell peppers and cheeses.
Slice bell peppers lengthwise as shown in the photo. Steam with vegetable broth or water until peppers soften and yet retain some of its crunchiness.
Let peppers cool. Pack the pepper with cheese and bean mixture and top it with cheese.
Pre-heat oven to 400°. Bake for 12-14 minutes.
Top with extra cheese and broil until top cheese melts.
Serve hot with Mexican rice.
