Spinach Puffs

A tasty snack you can enjoy with tea and coffee.

 

Makes 9 puffs.


Ingredients:

  • 2 cups of spinach, finely chopped

  • 1 sheet of Pepperidge Farm Puff Pastry Sheets

  • 1/4 cup finely chopped onion

  • 1/4 cup sweet corn kernels

  • 1/2 cup shredded mozzarella cheese

  • 1 green chili, minced

  • salt to taste

  • pepper to taste

  • 2 tsp olive oil

Method:

  1. Preheat oven to 400°F.

  2. Thaw pastry sheets to room temperature. Cut squares out of the sheets.

  3. Warm olive oil in a pan and sauté onion, spinach, and corn for 3 to 4 minutes.

  4. Add minced chili, salt and pepper. Sauté for additional 2 minutes or until there is no moisture in the spinach mixture.

  5. Add mozzarella cheese and mix well.

  6. Place 1 tsp of mixture in each square and fold it in triangle shape.

  7. Place on a greased baking sheet. Bake for 15 minutes.
