A tasty snack you can enjoy with tea and coffee.
Makes 9 puffs.
Ingredients:
2 cups of spinach, finely chopped
1 sheet of Pepperidge Farm Puff Pastry Sheets
1/4 cup finely chopped onion
1/4 cup sweet corn kernels
1/2 cup shredded mozzarella cheese
1 green chili, minced
salt to taste
pepper to taste
2 tsp olive oil
Method:
Preheat oven to 400°F.
Thaw pastry sheets to room temperature. Cut squares out of the sheets.
Warm olive oil in a pan and sauté onion, spinach, and corn for 3 to 4 minutes.
Add minced chili, salt and pepper. Sauté for additional 2 minutes or until there is no moisture in the spinach mixture.
Add mozzarella cheese and mix well.
Place 1 tsp of mixture in each square and fold it in triangle shape.
Place on a greased baking sheet. Bake for 15 minutes.
