Savory and sweet snack made with Maida (all-purpose flour)
An easy and delicious snack for tea time or any time. I am preparing both savory and sweet versions of Shankarpali. Store it in an air-tight container for a week.
Ingredients for savory Shankarpali:
1 cup maida (all-purpose flour)
1/4 cup fine semolina
1/2 tsp ajwain ( carom seeds)
1/2 kalonji ( nigella seeds)
1 tbsp ghee
1 tsp red chili powder
salt to taste
oil for deep fry
Ingredients for sweet shankarpali:
1 cup maida
A little less than 1/2 cup powdered sugar
1 tsp ghee
1/4 tsp cardamom powder
Oil for deep fry
Method for savory shankarpali:
Mix all ingredients well, except for oil, and knead into a soft dough using water. Cover and keep aside for 30 minutes.
Grease your hands with ghee and form dough balls that are you are comfortable working with.
Roll out each dough ball and cut it into diamond shapes as shown in the picture.
Deep fry in hot oil and store in a container when cool.
Method for sweet shankarpali:
Mix all ingredients and knead into a hard dough.
Roll out and cut into squares or diamonds and deep fry.
Store in an air-tight container.
