Sweet semolina dish made with pineapple.
Semolina porridge or sheera is made on festivals like rakshabandhan, diwali, and durga puja.
I came across pineapple sheera on such occasion in my friend's house. I have seen people from Karnataka use pineapple in a variety of dishes. Crushed pineapple or pineapple pieces are added in sheera to give it that sweet and tangy taste.
Serves 4-5 people.
Ingredients:
1 cup dry roasted semolina
1/2 cup crushed pineapple
1 cup of sugar
2 tbsp ghee
1 tbsp of cashew pieces
1/2 tbsp of raisins
1/4 tsp of cardamom powder
rose water or saffron (optional)
Method:
Roast cashew pieces and raisins in hot ghee.
Drain cashew and raisins and keep it aside.
In the same ghee, add 2 cups of water. Bring to slight boil and add pineapple.
Let it come to rolling boil. Add sugar and stir well.
After 3 to 5 minutes , add semolina carefully and stir making sure no lumps are formed.
Stir in cashews, raisins, cardamom powder, etc., and mix well.
Keep it covered for 10 minutes and serve.
