Palak Chole

Also known as Spinach Chickpea Curry.

Want a change from the regular spicy chole? Try palak chole, which is an equally appetizing and lip-smacking dish.

Serves 4 people.

Ingredients:

  • 2 cups salted and boiled channa (garbanzo beans)

  • 1 cup pureed spinach

  • 1/2 cup finely chopped onion

  • 1/2 cup finely chopped tomato

  • 1 tbsp grated ginger

  • 1 tbsp minced garlic

  • 3-4 finely chopped green chili

  • 1 tsp jeera(cumin seeds)

  • 1 1/2 tbsp coriander-cumin powder

  • 1 tsp red chili powder

  • 1/4 tsp turmeric

  • 1/2 tsp chole masala

  • 1/2 tsp black salt

  • 1/2 tsp pepper powder

  • 3-4 tbsps ghee or oil

  • salt to taste

Method:

  1. I have used ghee to make this dish because of its flavor and the yumminess it gives to the dish.

  2. Heat ghee in a pan and toast cumin seeds. Add ginger, garlic, and green chili separately and fry each for a minute.

  3. Now add onions and fry until translucent. Add tomato and cook until soft.

  4. Add all the masala powders and mix well. Use red and green chili as per your taste.

  5. Adding black salt gives the dish its distinct taste.

  6. After the mixture has cooked for a couple of minutes, add chole.

  7. Mash the chole a little and let it simmer for 3-4 minutes.

  8. Add spinach puree, and simmer for additional 3-4 minutes.

  9. Squeeze half a lemon and garnish with julienned ginger.

  10. Serve hot with Roti or bread of your choice.
