Mathri

A crunchy savory snack made with all-purpose flour.

Mathri, also known as spicy kaja, is a favorite Diwali snack and also can be served as a tea-time snack on occasions. Though time-consuming, it is well worth it.

 

Makes 30 pieces


Ingredients:

  • 2 cups maida (all-purpose flour)

  • 1/2 tsp jeera (cumin seeds)

  • 1/2 tsp ajwain (carom seeds)

  • 1/2 tsp kalonji (nigella seeds)

  • 1/2 tsp salt

  • 1 tsp red chili powder/flakes

  • 4 tbsps ghee

  • 1 tbsp ghee + 1 tbsp

  • oil to deep fry

Method:

  1. Mix all ingredients except for oil to deep fry. The mixture should be crumbly.

  2. Add enough water to make a soft and pliable dough. grease the dough lightly with oil and keep covered for 30 minutes.

  3. Roll the dough and cut the dough into the size you can work with.

  4. Roll out each ball of dough as thinly as possible like a roti without using flour.

  5. Make a paste of ghee and maida and apply on the roti.

  6. Starting at one corner, roll the roti as shown in the picture and cut into 1-inch sized pieces.

  7. Roll each cut piece into a round shape and fold like a triangle as shown in the picture.

  8. Deep fry until golden brown and store in air-tight containers after Mathris cool down.
