Khichdi


Khichdi is a mixed rice dish with daals, from simple to complex, which is made in different parts of India. This dish is not only easy to make, but also it is known to be very comforting. I will be showing you a Gujarati inspired Khichdi.

 

Serves 4 people.


Ingredients:

  • 1 cup rice

  • 1 cup mung daal (yellow gram)

  • 1/2 cup tuvar lilva (shelled pigeon peas) (I used the frozen version for ease)

  • a small bunch of fresh methi (fenugreek) leaves

  • 1 potato diced

  • 1 onion sliced

  • 1 tbsp peanuts

  • 1 tsp urad daal (split gram)

  • 1 tsp jeera (cumin seeds)

  • 1/4 tsp hing (asafatida)

  • 1 tsp black pepper corns

  • 1/2 tsp turmeric

  • 1-2 dried red chili

  • 1 tsp ginger paste

  • 5-6 garlic cloves (optional)

  • 2 tbsp oil/ghee

  • salt to taste

Method:

  1. Heat ghee in pressure cooker or Instant pot.

  2. Fry urad daal, peanuts, jeera and red chili until golden brown. Add hing and black pepper corns along with potato and onions.

  3. Add ginger-garlic paste and mix well.

  4. Add tuvar lilva and chopped methi leaves. Fry for few minutes and then add daal and sauté for 2-3 minutes. Add rice, salt, and turmeric. Sauté for another 2-3 minutes.

  5. Add required water and cook the khichdi.

  6. Serve hot with yogurt.
