Indian style instant cheesecake
Makes 4 cheesecakes
Ingredients:
8 oz mascarpone cheese
1 8 oz can condensed milk
15 Nilla vanilla wafers
1 tbsp white sugar
7-8 fresh strawberries
1 tsp melted butter
1/4 tsp vanilla extract
1/2 cup strawberry compote
1/2 tsp lemon juice
the rind of orange or lemon julienned
2 martini glasses
Method:
To make the strawberry compote, mash strawberries and add in sugar. Warm this mixture for 2 minutes on medium flame. Refrigerate after cooling.
Powder vanilla wafers and melted butter finely and keep aside.
Using a blender, blend mascarpone cheese and condensed milk.
Add lemon juice and vanilla essence individually and blend the mixture.
To assemble, add powdered wafers (1 tbsp) to each martini glass. Top with cheese mixture and freeze for 20 to 30 mins.
Just before serving, top the mixture in each martini glass with strawberry compote, julienned lemon rind, and fresh strawberry.
Serve and enjoy!
