Rice with red chili paste and veggies.
A simple easy meal made with fresh or leftover cooked rice and veggies. Make sure to add the red chili paste or sauce to give that extra zing to the rice. Red chili paste can be made with few whole red chilies (Kashmiri preferred), cumin, and garlic.
Serves 2-3 people.
Ingredients:
1 cup cooked rice of your choice
1/4 cup red chili paste or sauce
1 cup thinly sliced mixed veggies of your choice
1 tsp grated ginger
1/2 tsp jeera (cumin seeds)
1 and 1/2 tsp Pav Bhaji masala
2 tbsps ghee
1 tbsp oil
salt to taste
Method:
Heat butter and oil in a pan. Add cumin seeds. when they splutter add ginger, red chili paste/sauce, and sauté well.
Add veggies of your choice. I have used cabbage, green beans, potatoes, bell pepper, and peas and sautéed in the order given on medium flame.
Add more butter if you like and salt to taste. Add any long grain cooked rice and pav bhaji masala.
Mix well and cover. After 2 minutes, sauté for another minute.
Serve hot with yogurt.
