A perfect blend of vegetables with cream.
Serves 4-5 people
Ingredients:
4 potatoes, peeled and diced
1 white onion diced
2 small leeks chopped finely
2 carrots, peeled and diced
2 celery stalks diced
1 parsnip, peeled and diced
1 cup frozen peas
3 cups vegetable broth
1/2 cup heavy cream
1 stick butter with 1 tsp oil
salt and pepper to taste
Method:
In a heavy-bottom pan, melt butter along with oil. Sauté potatoes, onions, and leeks for 5 mins on medium heat.
Add some salt and pepper and add carrots, celery, and parsnip. Sauté for 5 mins covered on low heat.
Heat vegetable broth separately and add to sautéed vegetables. Let it simmer for 10 to 15 mins on low heat or until vegetables are tender. Check salt and pepper.
Turn off the stove and blend into smooth mixture using hand blender.
Bring back to stove and add cream. Mix well and add frozen peas.
Let it bubble for a minute before turning off the stove. Keep covered for 15 mins before serving.
