A delicious accompaniment to dosas!
Coconut chutney with mint is a variation on the beloved plain coconut chutney that is known for its distinct flavor. Enjoy!
Ingredients:
1 cup grated coconut
10-15 fresh mint leaves
1 inch piece of ginger
4 green chilis
1/2 a lemon, juiced
1 tsp oil
1/2 mustard seeds
1 dried red chili
salt to taste
Method:
Blend first five ingredients (coconut, mint, ginger, green chilis, lemon juice).
Add 1/4 cup of water and salt and blend until smooth chutney consistency.
Temper the remaining ingredients on medium flame and add to chutney.
Enjoy along with dosa, adai, etc.
