Chili Cheese Toast

Mumbai-style street food.

Since I am unable to go to Mumbai and eat the mouthwatering street food, I thought that I could bring Mumbai cuisine into my own home by making this famous dish. In the future, I hope to recreate more of these Mumbai-style street foods, as I know my children will be craving them for the holidays.

 

Makes 2 sandwiches.


Ingredients:

  • 4 slices of bread

  • 1 cup grated cheese of your choice (I used a 3 cheese blend)

  • 2 tablespoons coriander-mint chutney (check out this recipe!)

  • 4 tablespoons softened butter

  • 2 green chilis, finely minced

  • 1 bell pepper (any color), finely chopped

  • 1/2 red onion, finely chopped

  • 1 tsp red chili flakes or powder

  • 1 tsp chaat masala

  • salt to taste


Method:

  1. Apply butter to all bread slices evenly.

  2. Apply coriander chutney on two of the slices evenly, on top of the butter as shown in the above picture.

  3. Sprinkle red chili flakes on the other two slices.

  4. In a bowl, mix the rest of the above ingredients and layer on top of all of the bread slices, as shown in the picture.

  5. Grill the slice as an open sandwich or a closed sandwich, which is shown in the picture.

  6. Enjoy with ketchup!
