A dish you can enjoy on a rainy day.
The other day, it was raining, and I wanted to cook something new. Because we are all staying at home during the quarantine, this simple and tasteful recipe came into mind. This recipe features peanuts, spices, capsicum, potato, and more. Hopefully, this dish will brighten a gloomy day! Enjoy!
This recipe yields 4 servings.
Ingredients:
3 medium capsicum (bell peppers)
5 medium potatoes
1 medium onion
1/2 cup of peanuts
1 dried red chili
1 1/2 tsp of ginger-garlic paste
1 green chili
1 tsp of garam masala
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1/4 cup of canola oil
salt to taste
cilantro leaves for garnish
Method
Wash and dice capsicum, potatoes, and green chili.
Finely chop onions.
Roast peanuts and red chili until peanuts turn brown. Then blend until powder.
Heat oil in a pan on medium heat and add ginger-garlic paste and chopped green chili.
After a minute of stirring, add garam masala, coriander powder, cumin powder, and turmeric powder.
Stir for another minute.
Add all vegetables along with salt to taste, and stir.
Cover pan to cook until vegetables soften.
Add peanut powder and mix well.
Cover pan and cook for another minute.
Turn off stove and garnish with chopped cilantro leaves.
Enjoy with roti and yogurt!
