Bread Pudla Sandwich

Also known as Savory bread sandwich.

When one thinks of Mumbai street food, a myriad of mouthwatering and incredibly flavorful combinations of ingredients come to mind. Each suburb has its own unique presentation of food and tastes. Today I am presenting bread pudla sandwich made with a couple of toppings that we like. You can top with simple ingredients like green chili, cilantro, cheese, and veggies. For veggies, I have used shredded cabbage, grated carrot, grated beetroot, and chopped spinach leaves.

Serves 4 people.

Ingredients:

  • 4 slices of bread

  • 1 and 1/2 cups of besan (gram flour)

  • 1 tsp ajwain (carom seeds)

  • 1 tsp red chili powder

  • 1/4 tsp baking soda

  • 1/2 cup grated mozzarella cheese

  • 1 tsp minced garlic

  • 1 tbsp chopped cilantro

  • 1 cup finely chopped mixed veggies

  • oil to shallow fry

  • 1 stick of butter

  • salt to taste

Method:

  1. Mix besan with ajwain, red chili, baking soda, cilantro, and 1/2 tsp salt. Add enough water to form a free-flowing batter, not too thick or thin.

  2. Heat 1 tbsp butter with 2 tbsp oil in a flat pan. Dip bread slices in batter, one after the other, and place on pan. Add toppings of your choice, flip and fry on both sides and make sandwiches.

  3. For the cheese pudla sandwich, top each slice of bread with cheese, minced garlic, and 1 tbsp of butter as shown in the picture. Flip and fry on both sides evenly making sure the cheese does not burn. Fold ,cut and serve with ketchup or coriander chutney.

  4. For the mixed veggie sandwich, top each slice of bread with mixed veggies, 1 tbsp butter, and drizzle with a little batter. Flip and fry on both sides evenly adding more butter, if necessary. Fold, cut into pieces and serve with mint chutney.
