Sweet made with besan (gram flour)
Boondi ladoo is a popular mouth-watering dessert of India. Today, I am presenting this ladoo which I learned from my mother. I would suggest using besan that is specific to ladoos. It is available in most Indian stores.
Makes about 18 ladoos
Ingredients:
1 cup besan (gram flour)
1cup sugar + 1/4 cup water
2 tbsp cashew pieces
2 tsp pistachio pieces
Kewra color (optional)
1/2 tsp cardamom powder
oil/ghee for deep fry
1/2 tsp lemon juice
Method:
Mix besan with 1/2 cup water and mix well to make sure there are no lumps.
Gradually add 1/4 cup water to form smooth and pouring consistent batter.
Using boond jhara, as shown in the picture, make boondi. Fry boondi in hot oil for 30- 60 seconds, remove and set aside.
In a heavy-bottomed pan dissolve sugar in 1/2 cup water. Boil for 2-3 minutes. Add cardamom powder, essence, and lemon juice.
Add fried boondi and mix well. Cook on low flame for 4-5 minutes or till thickens. Boondi will absorb the sugar syrup. Add chopped nuts and mix well.
Shut off the flame and keep covered for 3-4 minutes.
Transfer to a bowl and let it cool. Grease your palms with ghee and form ladoos, as shown in the picture, while the mixture is still warm.
Let it cool and keep it in air-tight containers for a week.
