Bhatura

Also known as deep fried bread made with all-purpose flour.

Making bhaturas is an art. There are different ways to make them and I have, at times, struggled to make perfect bhaturas. But with practice, you can master my favorite recipe.

 

Makes 12 bhaturas.


Ingredients:

  • 2 cups of maida (all purpose flour)

  • 1/4 cup fine semolina

  • 2 tbsps sour yogurt

  • 3-4 tbsps oil

  • oil to deep fry

  • water to make dough

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp sugar and salt to taste


Method:

  1. Add all ingredients except for water.

  2. Mix well and add water to make a soft, pliable dough.

  3. If sticky, knead with oil in your hands for about 10 minutes.

  4. Cover with wet cloth and keep it aside for 5-6 hours. You can also leave it overnight.

  5. Knead well again before use.

  6. Make golf-sized dough balls and roll out round/oval shapes.

  7. Deep fry in hot oil. Serve with chole and Punjabi pickles.
