Also known as potato spinach curry.
A good way of incorporating greens into your diet. Along with a bowl of yogurt, this dish makes a wholesome meal either for lunch or for dinner.
Ingredients:
2 bunches of fresh spinach
4 to 5 potatoes
1 small onion
2 tomatoes
2 green chili
1 tsp jeera (cumin seeds)
1 1/2 tsp ginger-garlic paste
1 tsp coriander-cumin powder
1 dried red chili
1 tsp kasuri methi (dried fenugreek leaves)
2 tbsp oil
1/4 turmeric powder
salt to taste
Method:

Chop onion, tomatoes and green chili finely.
Shallow fry potato pieces in 1 tbsp of oil using little salt. Remove from pan and keep aside.
Add rest of the oil to pan, fry jeera and red chili.
Add onions and fry till translucent. Add chopped green chili, ginger-garlic paste and sauté well.
Add coriander-cumin powder, tomatoes and again sauté well.
Add turmeric powder, salt, kasuri methi, and spinach and cook covered for 5 minutes.
Add fried potatoes and cook for additional 5 minutes or until water has evaporated.
Serve with hot rotis or parathas.
